Ingredients of Fluffy Pancake Recipe



  • 2 cups all-purpose | plain flour

  • 1/4 cup granulated sugar or sweetener

  • 4 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups milk (plus up to 1/4 cup extra if needed)

  • 1/4 cup butter, melted

  • 2 teaspoons pure vanilla extract

  • 1 large egg


INSTRUCTIONS

  1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the center and add the milk, slightly cooled melted butter, vanilla, and egg.

  2. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay).
    (The batter will be thick and creamy inconsistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple of tablespoons of extra milk into the batter at a time until reaching desired consistency).

  3. Set the batter aside and allow to rest while heating up your pan or griddle.

  4. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.

  5. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.

  6. Serve with honey, maple syrup, fruit, ice cream or frozen yogurt, or enjoy plain!

Plain pancake recipe. Serve with lemon wedges and caster sugar or your favourite filling. This is a great recipe that i found in my grandmas recipe book. Really good pancake recipe.



For fluffier pancakes separate the eggs and beat the whites until stiff. If you have a few leftover pancakes freeze them in a freezer bag. Make the batter with the yolks and fold the beaten egg whites into the batter last.



Repeat until all the batter is used up. Warm in the microwave skillet or toaster. If you use a larger pan you will have fewer pancakes.

They came out perfect when i mad. I sometimes mix it up and swap 75g of plain flour for wholemeal to give my pancakes lovely texture and flavour. I though maybe i had done something wrong so i remade it.

Serve your pancakes stacked up on a plate with a drizzle of maple syrup and any of your favourite toppings. Crepes are thinner and larger and usually have richer ingredients including sugar and or cream and are only cooked on one side. Judging from the weathered look of this recipe card this was a family favorite.



A delicious and easy pancake recipe that is fast to get on the table and better tasting than any convenience pre packaged mix. To make more american style pancakes swap the plain flour for self raising dolloping ladlefuls of batter into the pan without spreading it around the base. The best way to tell them apart.



Cook the pancakes on their first side for about 1 2 mins or until lots of tiny bubbles start to appear and pop on the surface. By far the worst pancake recipe i have ever made. The amount the recipe called for just seemed like too much.



When hot cook your pancakes for 1 min on each side until golden keeping them warm in a low oven as you go.
