  • 2 cups all-purpose | plain flour

  • 1/4 cup granulated sugar or sweetener

  • 4 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups milk (plus up to 1/4 cup extra if needed)

  • 1/4 cup butter, melted

  • 2 teaspoons pure vanilla extract

  • 1 large egg


INSTRUCTIONS

  1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the center and add the milk, slightly cooled melted butter, vanilla, and egg.

  2. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay).
    (The batter will be thick and creamy inconsistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple of tablespoons of extra milk into the batter at a time until reaching desired consistency).

  3. Set the batter aside and allow to rest while heating up your pan or griddle.

  4. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.

  5. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.

  6. Serve with honey, maple syrup, fruit, ice cream or frozen yogurt, or enjoy plain!

The best part is its totally customizable so you can change up the greens change up the nuts and leave out the parmesan. Skip the store bought pesto sauce and try your next pasta with pesto sauce. Drizzle the pasta with a couple tablespoons of oil and add the pesto sauce.



The best part other than its easy to make and doesnt use too many ingredients is it can be served warm or cold. Add to drained pasta along with pesto peppers tomatoes and about 12 cup pasta cooking water or more if desired. Make your pesto pasta with shrimp instead of chicken.



Pesto pasta with grilled chicken cut chicken into strips. Toss the pasta until the spaghetti is coated. Use a store bought rotisserie chicken as a shortcut substitute for the grilled chicken.



Grill chicken until cooked through about 8 minutes per side. Grilled chicken thighs will also work. Season chicken with garlic powder italian seasoning salt and pepper.



Cut the chicken into cubes. Mix well until chicken and pasta are well coated with the pesto adding a small amount of the pasta water if it seems dry. This grilled chicken and asparagus pesto pasta turned out even better than i thought it would.



Toss the pasta until the spaghetti is coated.
