Ingredients of Fluffy Pancake Recipe



  • 2 cups all-purpose | plain flour

  • 1/4 cup granulated sugar or sweetener

  • 4 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups milk (plus up to 1/4 cup extra if needed)

  • 1/4 cup butter, melted

  • 2 teaspoons pure vanilla extract

  • 1 large egg


INSTRUCTIONS

  1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the center and add the milk, slightly cooled melted butter, vanilla, and egg.

  2. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay).
    (The batter will be thick and creamy inconsistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple of tablespoons of extra milk into the batter at a time until reaching desired consistency).

  3. Set the batter aside and allow to rest while heating up your pan or griddle.

  4. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.

  5. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.

  6. Serve with honey, maple syrup, fruit, ice cream or frozen yogurt, or enjoy plain!

Really good pancake recipe. I shouldve read the reviews before following recipe and followed enchiladas suggestion of 12 tsp at most. I would recommend cutting the sugar in half.



I had to throw the lot away as nobody could eat this. This recipe makes a lot so i put leftovers in the freezer then heat then up later in the microwave and they taste great. Yummy for husband and kids.



Pour or scoop the batter onto the griddle using approximately 14 cup for each pancake. Like others i only added a pinch of salt and 2 tsp. The pancakes as written in this recipe did not work.



This is our saturday breakfast healthy for me. They came out alright after that but they were very sweet. I added an additional cup of milk to get it to the right consistency.

I dont think theres any need for those who love them to criticise others that they must have been expecting american pancakes as those individuals were also not expecting something resembling the french crepe. I wish i could say these pancakes were created because suddenly i wanted to make healthy pancakes and do without the butter but the truth is that we were out of butter. I think that this recipe does contain more milk than necessary for what many feel is the british pancake.
