  • 2 cups all-purpose | plain flour

  • 1/4 cup granulated sugar or sweetener

  • 4 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups milk (plus up to 1/4 cup extra if needed)

  • 1/4 cup butter, melted

  • 2 teaspoons pure vanilla extract

  • 1 large egg


INSTRUCTIONS

  1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the center and add the milk, slightly cooled melted butter, vanilla, and egg.

  2. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there maybe a couple of lumps but that's okay).
    (The batter will be thick and creamy inconsistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple of tablespoons of extra milk into the batter at a time until reaching desired consistency).

  3. Set the batter aside and allow to rest while heating up your pan or griddle.

  4. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.

  5. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with the remaining batter.

  6. Serve with honey, maple syrup, fruit, ice cream or frozen yogurt, or enjoy plain!

All you need is a few minutes prep time plus a few minutes to cook. I was stuck in my apartment thanks blizzard and found myself with time to prepare a big breakfast.



This recipe obliterates the need for additional ingredients in the pancake batter such as milk cream flour soda or even yogurt. Heres what i thought. They dont care about vanilla extract or buttermilk or chilling batters or whatever.



No need to add anything to the batter other than these three ingredients. Add eggs and cinnamon. In a bowl mash the banana with a fork.



Repeat with remaining batter. It doesnt get easier than this. For this recipe you do need some sort of blender or mixer.



Heat butter in a skillet over medium heat. Flip and cook until browned on the other side 2 to 3 minutes. They just want pancakesyesterday.



Simply mash up the banana whisk the eggs mix it up in a bowl with the remaining ingredients. Spoon batter into the hot butter and cook until bubbles form and the edges are dry 2 to 3 minutes. Heres what i thought.



Sure 3 ingredient pancakes were super easy to make but how do they taste. Add a spoonful of batter and cook for 3 4 minutes then flip and cook for an additional 3 4 minutes. Simple plant based 3 ingredient pancakes.
